Moonrise Croissanterie is an artisanal bakery specializing in the art of lamination, or the folding of butter into dough. This three day process is responsible for the creation of the delicate, flaky layers, and complex, nutty flavors found in our authentic French croissants and other specialty products. Chef Andrew Bergman was first introduced to viennoiserie (lamination) while attending The Culinary Institute of America. After graduating, he continued to hone his skills while working in the food media and private events industries. Along with Morgan Leet, who brings her hospitality and pastry expertise, we are excited to introduce Moonrise Croissanterie.
